
Ingredients
- Grated zest from 2 oranges
- 4 tablespoons honey (we suggest Orange Blossom or Toyon)
- 3 tablespoons tamari
- 1 tablespoon grated fresh ginger
- 2/3 cup orange juice
- 2 tablespoons sesame oil
- 2 teaspoons crushed garlic
- 1/4 teaspoon red pepper flakes
- 2 whole chickens cut into pieces and trimmed of fat and extra skin
Marinade
• Combine first 8 ingredients (Zest, Honey, Tamari, Ginger, OJ, Sesame Oil, Garlic, Red Pepper Flakes)
• Toss with the chicken, coating each piece well (a large ziplock bag or two works great!)
• Cover and refrigerate overnight
Baking
• Preheat oven to 375F
• Place in baking pan, with space between each piece, and season with salt and pepper
• Pour 2/3 cup of the marinade into the pan
• Bake for 1 hour, basting chicken every 15-20 minutes
Serving
• Pour all the leftover marinade into a saucepan and boil for 10 minutes to thicken
• Drizzle over cooked chicken & garnish with scallions
• Eat it! Serve with rice, grilled vegetables and a fine bottle of your favorite honey wine for the perfect balanced dinner!
