Blueberry Honey Cornbread

Recipe for Blueberry Honey Cornbread from Z Specialty Food

Ingredients

  • 1/4 cup honey (we suggest: Sweet Clover or Maple Blossom)
  • 1 egg
  • 1/2 cup plain yogurt
  • 1/2 cup milk
  • 3 tablespoons melted butter
  • 1 cup flour
  • 1 cup yellow corn meal
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries dusted in flour

Process

• Preheat oven to 425F

• Warm a greased pan or skillet (approx 8″ diameter)

• Beat together egg, milk, yogurt and honey

• Mix all dry ingredients

• Spread batter into the hot, greased pan and bake for 20 minutes

• Serve warm with honey drizzled on top.
